Science proves that pizza is highly addictive. Pizza is the ultimate comfort food! Having a glass of wine and some pizza on a relaxing Friday night, snuggled up on the sofa with your sweetie watching your favorite movie sounds so good, right? Doing it in a healthy way with your organic whole wheat crust, your favorite organic cheese, and two toppings. I know this is the feast Jesus is going to feed me when I get to heaven!So why is pizza so good going down and yet the next day many of us feel a little hungover, tired and maybe even a little depressed. Why does it taste so good and why do so many of us crave it? 30% of the calories consumed in the United States are estimated to be from pizza and, unfortunately, I’m not talking about organic pizza.Here’s the deal… Pizza contains gluten (the protein in whole wheat or white flour.) And it contains a lot of it because as you remember pizza dough has extra gluten in it! There’s also the cheese, which contains a protein called casein. Here’s the addiction: Gluten produces gluteomorphins in your body (this sounds like another word “endorphins.”) Gluten actually produces an endorphin-like substance in your body and casein produces casomorphin. Have you ever walked through the cheese section of the grocery store and looked at all the different cheeses calling your name? They have your number, they lure you in. That’s your body’s casomorphin and gluteomorphin, even just thinking about cheese, thinking about pizza, starts to release these chemicals for many of us; caseomorphin and gluteomorphin.It’s time to come to the realization that grains in general, including whole-wheat, aren’t necessarily healthy for your body as outlined in books like “The Wheat Belly” and “The Grain Brain” by Dr. David Perlmutter, MD.
